I have my 4" TG sas kit done and when the truck is sitting level there is only about 2 or 2.5" between the rubber bumpstop and the weld on bumpstop extension. Is it normal to have this little uptravel? Thanks!

Yes that's normal. The bump stop will compress about an inch. Once one bump stop contacts, it becomes a pivot point and articulation continues. Don't think of the travel stopping because of the bumpstop.
Take the truck out on a ramp or forklift and check out how the travel continues well past the point of contact.

The springs seem to have settled a bit now and I only have about 1.5" of space there now. The truck bottoms out quite frequently during normal driving. I just can't imagine this being normal, makes for a rather uncomfortable ride, I can take a pic and post it if you like. Would it hurt to either cut down the spacer or remove it completely?

The spacer can be cut down and shortened. Removing the bumpstop completly is not a good idea. We can also swap out your shackle plate for longer ones. This will add another inch to the gap between the bumpstop and the plate.

Thanks for the info Chris! How much is it normal for your springs to settle? Seems they have settled about an inch already.

Front springs 1" to 1.5" rear springs less than 1/2".
